Biryani Recipe

The history of biryani dates back to the 16th century in the Indian subcontinent. It is believed to have been first prepared in the kitchens of the Mughal Empire. The dish was created by combining marinated meat with fragrant basmati rice and spices. The Mughals were known to have a great fondness for food, and biryani was one of their favorite dishes.

The dish then spread to other parts of India, where different regional variations of the dish developed. In the south, the dish was prepared with a combination of local spices and ingredients, while in the north, the dish was prepared with a combination of yogurt and spices.

Ingredients:

 2 cups Basmati rice
 2 tablespoons ghee
 1 onion, thinly sliced
 1 teaspoon ginger-garlic paste
 1 teaspoon red chilli powder
 1/2 teaspoon turmeric powder
 1 teaspoon coriander powder
 1 teaspoon cumin powder
 1/2 teaspoon garam masala
 2 tablespoons chopped mint leaves
 2 tablespoons chopped coriander leaves
 2 green chillies, chopped
 2 tomatoes, chopped
 1/2 cup curd
 Salt to taste
 2 cups cooked vegetables (cauliflower, potato, peas, carrots)
 2 tablespoons oil
 2 cardamoms
 2 cloves
 2 cinnamon sticks
 2 bay leaves
 2 tablespoons khus khus
 1/2 cup coconut milk
 2 cups water


Instructions:

1. Soak the basmati rice for 30 minutes.

2. Heat the ghee in a heavy-bottomed pot. Add cardamoms, cloves, cinnamon sticks, bay leaves, and khus khus, and fry for a minute.

3. Add onion and fry till golden brown.

4. Add ginger-garlic paste, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala, chopped mint leaves, chopped coriander leaves, and green chillies. Fry for 2-3 minutes.

5. Add tomatoes and fry for another 2-3 minutes.

6. Now add curd, and salt to taste and fry for 2 minutes.

7. Add the cooked vegetables and fry for 2 minutes.

8. Add 2 cups of water, bring to a boil, and then add the soaked rice.

9. Simmer for 15 minutes or till the rice is cooked.

10. Add the coconut milk and mix well.

11. Garnish with coriander leaves and serve hot with raita.
