Ingredients:
1 cup cashews, ground into a fine powder
1 cup sugar
1/2 cup water
1/4 tsp cardamom powder (if you want to taste only kaju then don't add it)
2 tbsp ghee (clarified butter)
A few strands of saffron (optional) (Saffron adds flavor, and color to the food)
Edible silver foil (optional)
Instructions:
Grind the cashews into a fine powder and set aside.
In a saucepan, add the sugar and water. Stir until the sugar dissolves and bring to a boil.
Reduce the heat to low and let the mixture simmer until it thickens and forms a syrup. To check if it's done, drop a small amount of syrup into a bowl of cold water. If it forms a soft ball, the caramel syrup is ready.
Add the cashew powder to the syrup, along with the cardamom powder, ghee, and saffron. Mix well until everything is well combined and the mixture starts to come together.
Grease a plate or tray with ghee and transfer the mixture to it. Flatten it with a rolling pin or a spoon and let it cool for a few minutes.
Cut the mixture into diamond shapes or any desired shape and wrap each piece with edible silver foil (optional).
