Here is a simple recipe for making Pista Barfi:
Ingredients:1 cup pistachios shelled
1 cup sugar
1 cup milk
1/4 teaspoon cardamom powder
2 tablespoons ghee (clarified butter)
Edible silver leaf (optional)
Instructions:
Grind the pistachios in a food processor until they are a fine powder.
In a heavy-bottomed pan, mix together the ground pistachios, sugar, and milk.
Cook the mixture over medium heat, stirring continuously, until it thickens and starts to leave the sides of the pan. This should take about 15-20 minutes.
Add the cardamom powder and ghee to the mixture and stir well.
Continue to cook for another 5 minutes, or until the mixture forms a soft ball when dropped into cold water.
Pour the mixture into a greased plate and spread it evenly with a spatula.
Once it has cooled for a few minutes, cut the mixture into desired shapes and place a piece of edible silver leaf on each piece (if using).
Let the barfi cool completely before serving.
