Authentic Biryani Recipe

Ingredients:
1 kg basmati rice
4 cups mixed vegetables (carrots, peas, potatoes, cauliflower, beans)
2 large onions, sliced thinly
2 tbsp ginger-garlic paste
3 tbsp biryani masala powder
1 cup plain yogurt
2 cups water
1/2 cup ghee or vegetable oil
Salt to taste
Whole spices (2 bay leaves, 4 cardamom pods, 4 cloves, 1 cinnamon stick)
Fresh coriander and mint leaves
Instructions:
Rinse the basmati rice in cold water several times and soak it in enough water for 30 minutes.
In a large pot, heat the ghee or vegetable oil over medium heat. Add the sliced onions and sauté until golden brown.
Add the ginger-garlic paste and sauté for a few seconds until fragrant.
Add the mixed vegetables and sauté for 5-6 minutes until slightly tender.
Add the biryani masala powder and sauté for another minute until fragrant.
Add the plain yogurt and mix well. Add salt to taste.
In a separate pot, bring 8-10 cups of water to a boil. Add the soaked rice, along with the whole spices and salt to taste. Cook until the rice is 70-80% done.
Drain the water from the rice and spread half of it over the vegetable mixture in the pot.
Layer the remaining rice on top of the vegetable mixture. Pour 2 cups of water over the rice.
Cover the pot with a tight-fitting lid and place it over low heat. Cook for 25-30 minutes until the rice is fully cooked.
Garnish with fresh coriander and mint leaves and serve hot with raita or any other side dish of your choice.
To make raita, mix 1 cup plain yogurt with chopped cucumber, tomatoes, onions, and fresh mint leaves. Add salt to taste.
Once the biryani is cooked, turn off the heat and let it rest for 10-15 minutes. This will allow the flavors to blend together.
Using a spoon or a fork, gently mix the rice and vegetables together, making sure not to break the rice.
Serve the vegetable biryani hot with raita and some roasted papadum or pickle on the side.
Tips:
You can use any vegetables of your choice, such as mushrooms, bell peppers, or zucchini.
You can also add some fried paneer or tofu to the vegetable mixture for added protein.
To enhance the flavor of the biryani, you can also add a pinch of saffron soaked in milk to the rice while layering.
Make sure to use good-quality basmati rice for the best results.
Biryani masala powder ingredients:
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp black peppercorns
1 tsp fennel seeds
1 tsp cardamom seeds
1 tsp cloves
1 tsp cinnamon
1 tsp black cumin seeds (shahi jeera)
1 tsp nutmeg
1 tsp mace
Instructions:
In a heavy-bottomed pan, dry roast all the spices except nutmeg and mace on medium heat until fragrant.
Remove from heat and let it cool down.
Once the spices have cooled down, add them to a spice grinder or a mortar and pestle and grind them to a fine powder.
Add the nutmeg and mace to the spice mix and mix well.
Store the biryani masala powder in an airtight container in a cool, dry place.
Note: You can adjust the quantity of spices as per your taste preference. Also, you can use this biryani masala powder for both vegetable and non-vegetable biryanis.
