Veg Pulao Recipe
Veg pulao is a delicious and aromatic rice dish that is popular in India and many other parts of the world. This dish is made with fragrant basmati rice, mixed vegetables, and a variety of flavorful spices and herbs. The vegetables can include carrots, peas, beans, cauliflower, and more, depending on personal preference. The dish is typically cooked in a pan with ghee or oil, and the spices and vegetables are added to create a rich and flavorful dish that is perfect for any occasion. Veg pulao is often served with raita, a yogurt-based side dish, and can be enjoyed on its own or as a side dish with other main courses.Ingredients:
1 cup basmati rice
2 tablespoons ghee or oil
1 cinnamon stick
2-3 cardamom pods
2-3 cloves
1 bay leaf
1 onion, sliced
1 teaspoon cumin seeds
1 teaspoon ginger paste
1 teaspoon garlic paste
1-2 green chilies, chopped
1 carrot, chopped
1 small capsicum, chopped
1/2 cup green peas
1 teaspoon garam masala
2 cups water
Salt to taste
Instructions:
Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 20 minutes.
Heat ghee or oil in a pot or pressure cooker. Add cinnamon sticks, cardamom pods, cloves, and bay leaf. Sauté for a few seconds until the spices become fragrant.
Add sliced onions and sauté until they become golden brown.
Add cumin seeds, ginger paste, garlic paste, and chopped green chilies. Sauté for a minute.
Add chopped vegetables (carrot, capsicum, and green peas) and sauté for a few minutes until they become tender.
Add garam masala and salt. Mix well.
Drain the soaked rice and add it to the pot. Sauté for a minute.
Add 2 cups of water and bring it to a boil. If using a pressure cooker, close the lid and cook for 2 whistles. If cooking in a pot, cover it with a tight-fitting lid and simmer on low heat for 15-20 minutes or until the rice is cooked.
Once the rice is cooked, fluff it with a fork and let it rest for a few minutes before serving.
Your delicious and aromatic veg pulao is ready to serve! You can garnish it with fresh herbs, such as coriander and mint, and serve it with raita or yogurt.
