Tomato Rice Recipe

Ingredients:

1 cup of basmati rice

2 medium-sized tomatoes, chopped

1 onion, chopped

2 cloves of garlic, minced

1 teaspoon of grated ginger

1 teaspoon of cumin seeds

1 teaspoon of coriander powder

1/2 teaspoon of turmeric powder

1/2 teaspoon of red chili powder (optional)

Salt to taste

2 cups of water

2 tablespoons of oil

Fresh coriander leaves for garnishing


Instructions:

Rinse the rice in cold water a few times until the water runs clear. Soak the rice in cold water for 20-30 minutes. Drain the water and keep the rice aside.

Heat the oil in a pan on medium heat. Add cumin seeds and let them splutter.

Add chopped onions and sauté for a minute or two until they turn translucent.

Add grated ginger, minced garlic, and chopped tomatoes. Mix everything well and cook until the tomatoes become mushy.

Add coriander powder, turmeric powder, and red chili powder (if using). Mix everything well and cook for a minute or two until the spices release their aroma.

Add the soaked and drained rice to the pan. Mix well with the tomato-onion mixture.

Add 2 cups of water and salt to taste. Mix everything well and bring it to a boil.

Lower the heat, cover the pan with a tight-fitting lid, and let it simmer for 15-20 minutes until the rice is cooked and the water has been absorbed.

Once the rice is cooked, turn off the heat and let it sit covered for 5-10 minutes.

Fluff the rice gently with a fork and garnish with fresh coriander leaves.

Your tomato rice is ready to be served. Enjoy it as a side dish or a main course.
