Ingredients:

1/4 cup whole coriander seeds
1/4 cup cumin seeds
1/4 cup black peppercorns
2 tbsp whole cloves
2 tbsp green cardamom pods
1 tbsp cinnamon sticks, broken into small pieces
1 tsp grated nutmeg

Instructions:

In a dry pan, roast the whole coriander seeds, cumin seeds, black peppercorns, cloves, green cardamom pods, and cinnamon sticks over low heat until they turn fragrant and slightly browned. Stir constantly to prevent burning.

Let the spices cool down to room temperature.

Once cooled, add the grated nutmeg and transfer the roasted spices to a blender or spice grinder.

Grind the spices into a fine powder. You may need to do this in batches, depending on the size of your blender or grinder.

Once ground, sift the powder through a fine mesh sieve to remove any large particles.
