Ingredients:

4 cups raw rice

1/2 cup oil

2 teaspoons mustard seeds

2 teaspoons chana dal (split chickpeas)

2 teaspoons urad dal (split black gram)

20-25 curry leaves

1/2 cup peanuts

1 teaspoon asafoetida (hing)

1 teaspoon turmeric powder

4 tablespoons jaggery

Salt to taste

1/2 cup tamarind pulp

1 cup water

2 teaspoons coriander seeds

2 teaspoons cumin seeds

4 dried red chillies

1 cup grated coconut

Instructions:

Cook the rice in a pot with enough water until it is cooked and fluffy. Spread the rice on a plate and let it cool down to room temperature.

In a pan, heat oil on medium heat. Add mustard seeds and let them splutter.

Add chana dal and urad dal and fry until they turn golden brown.

Add peanuts, curry leaves, and asafoetida, and fry for a few seconds.

Add turmeric powder, jaggery, salt, and tamarind pulp, and mix well.

Add water and let the mixture come to a boil.

In a separate pan, dry roast coriander seeds, cumin seeds, and dried red chillies until they turn aromatic.

Grind the roasted spices along with the grated coconut to a fine powder.

Add the spice powder to the tamarind mixture and mix well.

Add the tamarind-spice mixture to the cooked rice and mix well until the rice is coated with the mixture.

Heat the rice on low heat for a few minutes until it is heated through.

Serve hot with papadum, pickle, or raita.
